The Perfect Gin and Tonic
Michael Bigattini's take on the classic, and the drink we would pour you first. The salt and the olive oil sound odd and are the whole point. The salt lifts the citrus, the oil carries the botanicals.
Ingredients
- 1 1/2 oz Tanqueray Rangpur gin
- 1/2 oz Porter's Tonic Original syrup
- 4 oz soda water or sparkling water
- 1 pinch of good salt
- 2 drops of grassy olive oil
- Ice
Method
- Fill a gin and tonic glass gently with ice.
- Add the gin, the tonic syrup and the soda water.
- Stir gently to mix the syrup through.
- Place a pinch of salt in the centre of the glass.
- Add a drop of olive oil on either side of the salt.
Makes one drink. A 237 ml bottle of Porter's Tonic Original makes sixteen.
